Tofu Smoothies - A protein boost and dairy substitute
Smoothies are my favorite "start the day right" food. As a general rule I'm a fan of Greek yogurt as the key creaminess factor - high protein, low fat and carbs, but I also love the tofu smoothie. You can add tofu to a yogurt base for more protein or if you feel like a dairy free option, blend tofu with coconut water for a smooth, creamy texture.
Smoothie making is not an exact science and I think the impromptu nature of the smoothie is what appeals to me - see what you've got in the fridge and freezer and just go with it. I do try to keep a few staples on hand - frozen blueberries, green tea, Greek yogurt, silken tofu, and my latest addition - coconut water. Makes me feel healthier just writing about it!
