Oh my this is yummy!

Crumble very crispy bacon and mix with coconut or almond flour. Add spices - I used cayenne, black pepper, and garlic sea salt.

Dip chicken tenders in egg white and roll in the bacon mixture. You will need to press the bacon into the chicken a bit. This was probably the trickiest part, but I had been enjoying wine with girlfriends, so it could have just been me.

Pan fry the chicken in some olive oil - about three minutes on each side. It will get a little dark, that's ok!

Add chicken to your favorite greens and drizzle with a little yogurt blue cheese dressing and Frank's hot sauce.
